"After an evening of sumptuous dining and excellent wines, our host poured us each a shot of nucino and told us about distilling. 20 years later we finally opened the distillery we imagined that magical night."

In those days...

 

'Those days' - being when we were fresh young producers working on our second television series, 'BC Wine Cellar'.

 

The premise of the series was to explore British Columbia's rapidly growing wine business. While filming at various wineries, we hit upon the idea of distilling after a night of eating and drinking at Nichol Vineyards in Naramata BC.

 

Outside of that encounter, distilling was more a myth than reality for us. After all, no one we knew, knew about the topic, it was illegal and the Internet was a brand new idea that was not yet the research tool it is today.

 

Times change however and progressive governments have made BC a great place for all craft beverages, including distilled spirits. And so, three years ago we embarked on the long simmering dream of owning our own farm gate distillery.

 

Today we are proud to present our fine handcrafted spirits for sale through the distillery, select farmers and craft markets, local restaurants and private liquor stores and of course, Online through this website.

OUR

DISTILLERY

Bruinwood is a tiny operation by any distillery standards at just under one thousand square feet and is situated on a idyllic rural property in British Columbia's beautiful Roberts Creek on the Sunshine Coast.

 

Our cherished distillery was crafted by local artisan builders who built it from the ground up. Featuring environmentally cleaver ideas and massive sawed beams, the building becomes a warm comfortable space to visit and learn about distilled spirits and distilling in BC.

 

Our distillery houses several stills which allow us to be diverse in the products we make. For example, just to make our gin alone takes three different stills to develop our unique style.

 

Everything we create is carefully hand crafted in small batches with BC ingredients and herbs and spices sourced locally and from around the world.

DISTILLING

"Making gin is my favorite activity in the distillery. The botanicals all smell and taste great but it takes a chef's touch and sensibility to bring them together in a pleasurable way. Not just once, but again and again."

The ancient art of distilling has been around for a very long time indeed. From the cradle of civilization to today, the idea of distillation has always seemed somewhat mysterious to the even relativity well educated spirits aficionado.

 

And like a lot of things in life, the basic concept is very simple - boil some alcoholic beverage of one sort or another and concentrate the resulting vapor.

 

Simple in idea, complex in execution, the process of distillation begins long before any stills are turned on. The distiller has to decide what kind of materials to ferment. They have to make sure the fermentation goes smoothly with happy yeast and conditions for the very best resulting flavour.

 

When the 'mash' has fermented to the distillers satisfaction, the actual distilling begins. Our vodka is distilled twice and our gin is triple distilled.

MODUS OPERANDI

1. GRAIN, HONEY & FRUIT SELECTION

 

Bruinwood uses the finest grains, fruits and honey produced here in the province. A key requirement in the operation of a craft distillery in British Columbia.

2. DISTILLATION

 

A mix of traditional and high tech distilling technology and multiple distillations allow us to bring you a very smooth and satisfying beverage.

3. FERMENTATION

 

The transformation of sugar into alcohol is the job of the fermentation process. Careful choice of yeast, temperature and the management of general distillery conditions all add to the complexity and taste of our specific spirits.

4. AGING & BOTTLING

 

Our spirits are aged in various vessels and for various times depending on the beverage. These aging times can range from a few weeks to years and always the patience required it worth it. We bottle in 750 ml and 375 ml sizes.
